Cocktails in the clouds!
If suddenly I go missing, you might well find me at City Spac at the Swissotel, my new favourite watering hole.
Their award-winning cocktail architect Richard Gillam presents an impressive list of drinks. Some familiar classics, some inventive new treats and some a mixture of both. If you like champagne, you’ll especially love it here as they have an array of drinks using bubby as the base. Winston Churchill famously said about champagne that “In victory we deserve it, in defeat we need it” and I couldn’t agree more.
Back to Richard Gillam, he is no ordinary bartender. Not mixologist either. He is officially a cocktail architect! Not only does he build flavours in your glass, he’s actually built the glass you’re sipping from. Check out this cute tea-cup inspired cocktail glass that he serves the appropriately named Bubble Tea in:
A wondrous mix of Sakura Tea infused Tanqueray Gin, fresh grapefruit juice, cranberry juice and their exclusive in-house made pomegranate grenadine. See the froth on the surface – that comes about from dunking a metal “tea bag” filled with dry ice in it. Keeps the drink super cold and makes for a great visual.
Richard’s drinks are not only delicious but are truly an awesome sensory experience. He also designed the actual bar-counter which is higher than most bars so customers can get a good look at their drinks being mixed. He truly is a cocktail architect in every sense of the word.
Another drink I highly recommend you try when you visit, is the tropical flavoured Mangaroma. Its a delicious fruit punch with Calvados brandy, Belvedere Pomarancza (an orange flavoured Vodka) passionfruit and mango juice and a hint of chili which really gives it a power-packed punch but subtle enough to keep you wanting more. Unfortunately I wasn’t able to photograph the herbal fog that emanates from the space between the smaller and larger can. It’s a mix of marjoram, rosemary and orange blossom that truly heightens the flavours of the drink.
The bar is located on the 70th floor and sipping on your favourite tipple while sitting back to enjoy this view:
